Ingredients
- Cauliflower - 400 grams, chopped into florets
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chickpea flour - 50 grams
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Tahini - 2 tablespoons
- Water - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, toss the cauliflower florets with 1 tablespoon of olive oil and roast for 20 minutes until tender and slightly browned.
- In a frying pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Remove the roasted cauliflower from the oven and let it cool slightly. Then, transfer it to a mixing bowl and mash it gently with a fork.
- Add the sautéed onion and garlic mixture, chickpea flour, chopped parsley, cumin, paprika, salt, black pepper, and lemon juice to the mashed cauliflower. Mix until well combined.
- Shape the mixture into 2 equal-sized patties.
- In the same frying pan, cook the patties over medium heat for about 4-5 minutes on each side, until golden brown.
- To prepare the tahini sauce, mix tahini with water in a small bowl until smooth. Adjust with more water if necessary to reach desired consistency.
- Assemble the burgers by placing the kofta patties on the whole wheat buns topped with lettuce and tomato slices. Drizzle with tahini sauce before serving.
