Ingredients

  • Cauliflower - 400 grams, chopped into florets
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpea flour - 50 grams
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Tahini - 2 tablespoons
  • Water - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, toss the cauliflower florets with 1 tablespoon of olive oil and roast for 20 minutes until tender and slightly browned.
  3. In a frying pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  4. Remove the roasted cauliflower from the oven and let it cool slightly. Then, transfer it to a mixing bowl and mash it gently with a fork.
  5. Add the sautéed onion and garlic mixture, chickpea flour, chopped parsley, cumin, paprika, salt, black pepper, and lemon juice to the mashed cauliflower. Mix until well combined.
  6. Shape the mixture into 2 equal-sized patties.
  7. In the same frying pan, cook the patties over medium heat for about 4-5 minutes on each side, until golden brown.
  8. To prepare the tahini sauce, mix tahini with water in a small bowl until smooth. Adjust with more water if necessary to reach desired consistency.
  9. Assemble the burgers by placing the kofta patties on the whole wheat buns topped with lettuce and tomato slices. Drizzle with tahini sauce before serving.
