Ingredients
- Cauliflower - 300 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pomegranate seeds - 30 grams (optional)
Steps
- Rinse the cauliflower and remove the leaves and stem. Cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
- In a large skillet over medium heat, add the riced cauliflower and sauté for about 5-7 minutes until tender. Remove from heat and let it cool.
- In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, chopped parsley, and chopped mint.
- Once the cauliflower has cooled, add it to the mixing bowl with the vegetables.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the cauliflower and vegetable mixture and toss everything until well combined.
- If using, sprinkle the pomegranate seeds on top before serving for added color and sweetness.
