Ingredients

  • Cauliflower - 300 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate seeds - 30 grams (optional)

Steps

  1. Rinse the cauliflower and remove the leaves and stem. Cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process.
  3. In a large skillet over medium heat, add the riced cauliflower and sauté for about 5-7 minutes until tender. Remove from heat and let it cool.
  4. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, chopped parsley, and chopped mint.
  5. Once the cauliflower has cooled, add it to the mixing bowl with the vegetables.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  7. Pour the dressing over the cauliflower and vegetable mixture and toss everything until well combined.
  8. If using, sprinkle the pomegranate seeds on top before serving for added color and sweetness.
