Ingredients

  • Cabbage leaves - 4 large
  • Quinoa - 100 grams
  • Chickpeas (cooked) - 150 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Whole grain burger buns - 2
  • Avocado (sliced) - 1 small
  • Vegan yogurt (for sauce) - 100 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the quinoa according to package instructions and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Stir in the cooked quinoa, chickpeas, tomato paste, cumin, paprika, salt, and black pepper. Mix well and cook for 5 minutes.
  6. Remove from heat and fold in the chopped parsley. Allow the mixture to cool slightly.
  7. While the mixture cools, blanch the cabbage leaves in boiling water for about 2 minutes to soften them. Drain and cool.
  8. Take 2 blanched cabbage leaves and place a generous portion of the quinoa-chickpea mixture in the center. Roll the cabbage leaves around the filling to form a burger patty shape.
  9. Place the cabbage rolls on a baking sheet and bake in the preheated oven for 15-20 minutes until heated through.
  10. While the patties are baking, prepare the burgers by toasting the whole grain buns and slicing the avocado.
  11. Assemble the burgers by placing a cabbage roll patty on each bun, adding sliced avocado, and a dollop of vegan yogurt on top.
