Ingredients

  • Bulgur - 50 grams
  • Cucumber - 100 grams, diced
  • Tomato - 100 grams, diced
  • Red onion - 30 grams, finely chopped
  • Parsley - 20 grams, chopped
  • Mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the bulgur under cold water, then place it in a bowl and cover with boiling water. Let it soak for about 10 minutes until it softens.
  2. While the bulgur is soaking, prepare the vegetables. Dice the cucumber and tomato, finely chop the red onion, and chop the parsley and mint.
  3. Once the bulgur has soaked, drain any excess water and fluff it with a fork.
  4. In a large mixing bowl, combine the soaked bulgur, diced cucumber, tomato, red onion, parsley, and mint.
  5. Drizzle the olive oil and lemon juice over the mixture, then season with salt and black pepper to taste.
  6. Toss everything together gently until well mixed, then serve chilled or at room temperature.
