Ingredients
- Bulgur - 50 grams
- Cucumber - 100 grams, diced
- Tomato - 100 grams, diced
- Red onion - 30 grams, finely chopped
- Parsley - 20 grams, chopped
- Mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the bulgur under cold water, then place it in a bowl and cover with boiling water. Let it soak for about 10 minutes until it softens.
- While the bulgur is soaking, prepare the vegetables. Dice the cucumber and tomato, finely chop the red onion, and chop the parsley and mint.
- Once the bulgur has soaked, drain any excess water and fluff it with a fork.
- In a large mixing bowl, combine the soaked bulgur, diced cucumber, tomato, red onion, parsley, and mint.
- Drizzle the olive oil and lemon juice over the mixture, then season with salt and black pepper to taste.
- Toss everything together gently until well mixed, then serve chilled or at room temperature.
