- Bulgur wheat - 100 grams
- Water - 250 ml

- Garlic - 1 clove, minced
- Tomato - 1 medium, diced
- Bell pepper - 1/2, diced
- Carrot - 1 small, diced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
- Stir in the diced tomato, bell pepper, and carrot, cooking for another 5 minutes until the vegetables are tender.
- Add the bulgur wheat to the saucepan, stirring well to combine with the sautéed vegetables.
- Pour in the water, and add salt, black pepper, and paprika. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 12-15 minutes, or until the bulgur is cooked and the water is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the bulgur with a fork and stir in the chopped parsley before serving.
