Ingredients

  • Bulgur wheat - 100 grams
  • Water - 250 ml

  • Garlic - 1 clove, minced
  • Tomato - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Carrot - 1 small, diced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
  3. Stir in the diced tomato, bell pepper, and carrot, cooking for another 5 minutes until the vegetables are tender.
  4. Add the bulgur wheat to the saucepan, stirring well to combine with the sautéed vegetables.
  5. Pour in the water, and add salt, black pepper, and paprika. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 12-15 minutes, or until the bulgur is cooked and the water is absorbed.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the bulgur with a fork and stir in the chopped parsley before serving.
