- Bulgur (fine) - 100 grams
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 small
- Red bell pepper (diced) - 1/2 medium
- Carrot (grated) - 1 small
- Tomato (diced) - 1 medium
- Vegetable broth - 300 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Rinse the bulgur under cold water and drain well.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the diced red bell pepper, grated carrot, and diced tomato, and cook for another 5 minutes until the vegetables have softened.
- Add the rinsed bulgur to the saucepan and stir well to combine with the vegetables.
- Pour in the vegetable broth and add salt, black pepper, and paprika.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for about 15-20 minutes, or until the bulgur is tender and has absorbed the liquid.
- Remove from heat, fluff with a fork, and stir in the chopped parsley before serving.
