Ingredients

  • Bulgur (fine) - 100 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 small
  • Red bell pepper (diced) - 1/2 medium
  • Carrot (grated) - 1 small
  • Tomato (diced) - 1 medium
  • Vegetable broth - 300 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Rinse the bulgur under cold water and drain well.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the diced red bell pepper, grated carrot, and diced tomato, and cook for another 5 minutes until the vegetables have softened.
  5. Add the rinsed bulgur to the saucepan and stir well to combine with the vegetables.
  6. Pour in the vegetable broth and add salt, black pepper, and paprika.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  8. Simmer for about 15-20 minutes, or until the bulgur is tender and has absorbed the liquid.
  9. Remove from heat, fluff with a fork, and stir in the chopped parsley before serving.
