Ingredients
- Bulgur wheat - 100 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Tomato - 1 medium, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the bulgur wheat under cold water and drain.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and diced red bell pepper, cooking for another 3-4 minutes.
- Add the diced tomato, salt, black pepper, cumin, and paprika; cook for 2 minutes until the tomatoes soften.
- Add the rinsed bulgur to the saucepan and stir well to combine with the vegetable mixture.
- Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the bulgur is tender and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the bulgur with a fork, then stir in the chopped parsley and lemon juice.
- Serve warm or at room temperature.
