- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Parsley - a handful, chopped
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Incorporate the diced carrot and potato, cooking for an additional 5 minutes while stirring occasionally.
- Add the chopped tomato, salt, black pepper, and paprika, cooking for another 3 minutes until the tomatoes soften.
- Stir in the bulgur and vegetable broth, bringing the mixture to a boil.
- Once boiling, reduce the heat to low and cover the pot, letting it simmer for about 15 minutes or until the bulgur and vegetables are tender.
- Remove from heat, stir in chopped parsley, and adjust seasoning as necessary.
