  • Vegetable broth - 750 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - a handful, chopped

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Incorporate the diced carrot and potato, cooking for an additional 5 minutes while stirring occasionally.
  4. Add the chopped tomato, salt, black pepper, and paprika, cooking for another 3 minutes until the tomatoes soften.
  5. Stir in the bulgur and vegetable broth, bringing the mixture to a boil.
  6. Once boiling, reduce the heat to low and cover the pot, letting it simmer for about 15 minutes or until the bulgur and vegetables are tender.
