Ingredients
- Broccoli - 300 grams
- Onion - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Wash and chop the broccoli into small florets, and finely chop the onion and garlic.
- In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the broccoli florets and cook for 3-4 minutes, then pour in the vegetable broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the broccoli is tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
- Return the pureed soup to the pot over low heat. Stir in the heavy cream, salt, black pepper, and lemon juice. Heat through for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
