Ingredients

  • Broccoli - 300 grams
  • Onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Wash and chop the broccoli into small florets, and finely chop the onion and garlic.
  2. In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the broccoli florets and cook for 3-4 minutes, then pour in the vegetable broth.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the broccoli is tender.
  6. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
  7. Return the pureed soup to the pot over low heat. Stir in the heavy cream, salt, black pepper, and lemon juice. Heat through for another 2-3 minutes.
  8. Serve hot, garnished with fresh parsley.
