- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and black pepper to create the marinade.
- Add the fish fillets to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or grill pan over medium-high heat.
- While the fish is marinating, prep the vegetables by tossing the halved cherry tomatoes and sliced zucchini with a little olive oil, salt, and pepper.
- Once the grill is hot, add the marinated fish fillets and grill for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.
- At the same time, grill the cherry tomatoes and zucchini for about 5-7 minutes, turning occasionally until tender and slightly charred.
- Serve the grilled fish alongside the grilled vegetables, garnished with additional fresh herbs if desired.
