Ingredients

  • White fish fillets (such as sea bass or snapper) - 300 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and black pepper to create the marinade.
  2. Add the fish fillets to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill or grill pan over medium-high heat.
  4. While the fish is marinating, prep the vegetables by tossing the halved cherry tomatoes and sliced zucchini with a little olive oil, salt, and pepper.
  5. Once the grill is hot, add the marinated fish fillets and grill for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.
  6. At the same time, grill the cherry tomatoes and zucchini for about 5-7 minutes, turning occasionally until tender and slightly charred.
  7. Serve the grilled fish alongside the grilled vegetables, garnished with additional fresh herbs if desired.
