- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Cut the red and green bell peppers in half, remove the seeds, and place them on a baking sheet.
- Drizzle 2 tablespoons of olive oil over the bell peppers, sprinkle with salt, and roast for 20 minutes until they are tender and slightly charred.
- While the peppers are roasting, heat the remaining 2 tablespoons of olive oil in a skillet over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomatoes, black pepper, and red pepper flakes to the skillet, and cook for about 5 minutes until the tomatoes are soft.
- Remove the roasted peppers from the oven and chop them into bite-sized pieces.
- Fold the chopped peppers into the skillet with the tomato mixture and cook for an additional 2-3 minutes to combine flavors.
- Remove from heat, stir in the chopped parsley and lemon juice, and serve warm or at room temperature.
