Ingredients

  • Sardines - 400 grams, cleaned and gutted
  • Red bell pepper - 1 medium, finely chopped
  • Green bell pepper - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Red pepper flakes - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine the chopped red and green bell peppers, minced garlic, olive oil, red pepper flakes, paprika, lemon juice, salt, and black pepper to create the marinade.
  2. Add the cleaned sardines to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes to absorb the flavors.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Once the grill is hot, place the marinated sardines on it. Grill for about 4-5 minutes on each side or until the fish is cooked through and has nice grill marks.
  5. Remove the sardines from the grill and let them rest for a couple of minutes.
  6. Serve the grilled sardines garnished with fresh parsley and additional lemon wedges on the side.
