Ingredients

  • Active dry yeast - 7 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Red bell peppers - 200 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Red pepper flakes - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover it with a damp cloth, and let it rise for 1 hour or until doubled in size.
  4. While the dough is rising, heat a pan over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Add minced garlic and diced red bell peppers, cooking for another 5-7 minutes until softened.
  5. Stir in the tomato paste, red pepper flakes, black pepper, and chopped parsley. Cook for an additional 2 minutes, then remove from heat and add lemon juice. Let the mixture cool slightly.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
  8. Transfer the rolled dough to a baking sheet lined with parchment paper. Spoon the pepper mixture evenly onto each oval, leaving a small border around the edges.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are golden and crispy.
  10. Remove from the oven, slice, and serve hot.
