Ingredients

  • Mussels - 500 grams, cleaned and de-bearded
  • Rice - 100 grams, rinsed
  • Onion - 1 medium, finely chopped
  • Green bell pepper - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Red pepper flakes - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Water - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and green bell pepper, and sauté until softened, about 5 minutes.
  2. Stir in the rice, diced tomato, red pepper flakes, paprika, salt, and black pepper. Cook for another 2 minutes, stirring frequently.
  3. Add the water to the saucepan, bring to a boil, then reduce the heat to low. Cover and simmer for approximately 15 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it cool slightly.
  4. Preheat your oven to 180°C (350°F).
  5. Once the rice mixture is cool, gently stuff each mussel shell with a spoonful of the rice mixture. Place the stuffed mussels in a baking dish, open side up.
  6. Bake the mussels in the preheated oven for 15-20 minutes, until they are heated through and slightly golden on top.
  7. Remove from the oven and sprinkle with chopped parsley. Serve with lemon wedges on the side.
