Ingredients
- Pasta (spaghetti or penne) - 160 grams
- Red bell peppers - 2 medium, roasted
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Start by roasting the red bell peppers; place them on a baking tray and roast in the oven at 200°C (392°F) for about 20 minutes until the skins are charred. Remove from the oven and let them cool before peeling off the skins and chopping the peppers.
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cook for an additional minute, stirring to avoid burning.
- Stir in the roasted red peppers, tomato paste, paprika, cayenne pepper, salt, and black pepper. Cook for another 5 minutes to combine the flavors, adding reserved pasta water as needed to create a sauce consistency.
- Add the cooked pasta to the skillet, tossing well to coat the pasta with the sauce. Cook for 2-3 minutes to heat through.
- Serve the Biberli Makarna hot, garnished with fresh chopped parsley.
