Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Red bell peppers - 2 medium, roasted
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Start by roasting the red bell peppers; place them on a baking tray and roast in the oven at 200°C (392°F) for about 20 minutes until the skins are charred. Remove from the oven and let them cool before peeling off the skins and chopping the peppers.
  2. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  4. Add the minced garlic and cook for an additional minute, stirring to avoid burning.
  5. Stir in the roasted red peppers, tomato paste, paprika, cayenne pepper, salt, and black pepper. Cook for another 5 minutes to combine the flavors, adding reserved pasta water as needed to create a sauce consistency.
  6. Add the cooked pasta to the skillet, tossing well to coat the pasta with the sauce. Cook for 2-3 minutes to heat through.
  7. Serve the Biberli Makarna hot, garnished with fresh chopped parsley.
