- Parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the grill to medium heat.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the chopped red bell pepper, paprika, salt, and black pepper to the skillet, cooking for an additional 5 minutes until the pepper softens.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Carefully stuff the calamari tubes with the pepper mixture using a small spoon, ensuring not to overfill them.
- Brush the stuffed calamari with the remaining olive oil and season with a little extra salt and pepper.
- Place the calamari on the grill and cook for about 2-3 minutes on each side, or until they are opaque and slightly charred.
- Remove from the grill and let rest for a minute before serving.
