Ingredients

  • Calamari tubes - 300 grams

  • Parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the grill to medium heat.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the chopped red bell pepper, paprika, salt, and black pepper to the skillet, cooking for an additional 5 minutes until the pepper softens.
  4. Remove from heat and stir in the chopped parsley and lemon juice.
  5. Carefully stuff the calamari tubes with the pepper mixture using a small spoon, ensuring not to overfill them.
  6. Brush the stuffed calamari with the remaining olive oil and season with a little extra salt and pepper.
  7. Place the calamari on the grill and cook for about 2-3 minutes on each side, or until they are opaque and slightly charred.
  8. Remove from the grill and let rest for a minute before serving.
