- Fresh anchovies - 400 grams
- Red bell pepper - 1 medium, finely chopped
- Green bell pepper - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 1 tablespoon
- Red pepper flakes - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Clean the anchovies by removing the heads and guts, then rinse them under cold water. Pat dry with paper towels.
- In a bowl, combine the finely chopped red and green bell peppers, minced garlic, chopped parsley, olive oil, lemon juice, red pepper flakes, salt, and black pepper to create the stuffing mix.
- Lay the cleaned anchovies open on a flat surface, skin side down, and place about a teaspoon of the stuffing mixture on each anchovy.
- Fold the anchovies over to enclose the stuffing and secure with a toothpick if necessary.
- Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Once hot, add the stuffed anchovies and cook for about 3-4 minutes on each side until they are golden brown and crispy.
- Serve hot, garnished with extra parsley and lemon wedges if desired.
