Ingredients

  • Fresh anchovies - 400 grams
  • Red bell pepper - 1 medium, finely chopped
  • Green bell pepper - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Clean the anchovies by removing the heads and guts, then rinse them under cold water. Pat dry with paper towels.
  2. In a bowl, combine the finely chopped red and green bell peppers, minced garlic, chopped parsley, olive oil, lemon juice, red pepper flakes, salt, and black pepper to create the stuffing mix.
  3. Lay the cleaned anchovies open on a flat surface, skin side down, and place about a teaspoon of the stuffing mixture on each anchovy.
  4. Fold the anchovies over to enclose the stuffing and secure with a toothpick if necessary.
  5. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  6. Once hot, add the stuffed anchovies and cook for about 3-4 minutes on each side until they are golden brown and crispy.
  7. Serve hot, garnished with extra parsley and lemon wedges if desired.
