- Red bell peppers - 100 grams (diced)
- Green bell pepper - 50 grams (diced)
- Onion - 50 grams (finely chopped)
- Garlic - 1 clove (minced)
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 10 grams (chopped)
Steps
- In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced red and green bell peppers to the skillet. Cook for an additional 5-7 minutes until softened.
- Stir in the paprika, black pepper, and chopped parsley. Remove from heat and let the filling cool.
- Once the dough has risen, punch it down and roll it out into a rectangular shape on a floured surface.
- Spread the pepper filling evenly over the surface of the dough, leaving a small border around the edges.
- Roll the dough tightly from one end to the other and pinch the edges to seal. Place it seam-side down on a baking sheet lined with parchment paper.
- Preheat the oven to 200°C (390°F). Let the rolled bread rest for an additional 10 minutes.
- Bake in the preheated oven for about 25-30 minutes, or until golden brown. Let it cool slightly before slicing and serving.
