Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Red bell peppers - 100 grams (diced)
  • Green bell pepper - 50 grams (diced)
  • Onion - 50 grams (finely chopped)
  • Garlic - 1 clove (minced)
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 10 grams (chopped)

Steps

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the yeast mixture and olive oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  4. While the dough is rising, prepare the filling. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.
  5. Add the diced red and green bell peppers to the skillet. Cook for an additional 5-7 minutes until softened.
  6. Stir in the paprika, black pepper, and chopped parsley. Remove from heat and let the filling cool.
  7. Once the dough has risen, punch it down and roll it out into a rectangular shape on a floured surface.
  8. Spread the pepper filling evenly over the surface of the dough, leaving a small border around the edges.
  9. Roll the dough tightly from one end to the other and pinch the edges to seal. Place it seam-side down on a baking sheet lined with parchment paper.
  10. Preheat the oven to 200°C (390°F). Let the rolled bread rest for an additional 10 minutes.
  11. Bake in the preheated oven for about 25-30 minutes, or until golden brown. Let it cool slightly before slicing and serving.
