- Red bell peppers - 300 grams
- Tomatoes - 200 grams
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Roast the red bell peppers over an open flame or in the oven until the skins are charred and blistered. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes.
- Once cooled, peel the skins off the peppers, remove the seeds, and chop them coarsely.
- In a pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the chopped roasted peppers and diced tomatoes to the pan. Stir well and cook for about 10 minutes, allowing the mixture to reduce slightly.
- Season with salt, black pepper, paprika, and cumin, mixing thoroughly. Cook for an additional 5 minutes.
- Remove from heat, stir in the chopped parsley, and let it cool slightly before serving.
