Ingredients

  • Red bell peppers - 300 grams
  • Tomatoes - 200 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Roast the red bell peppers over an open flame or in the oven until the skins are charred and blistered. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes.
  2. Once cooled, peel the skins off the peppers, remove the seeds, and chop them coarsely.
  3. In a pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chopped roasted peppers and diced tomatoes to the pan. Stir well and cook for about 10 minutes, allowing the mixture to reduce slightly.
  5. Season with salt, black pepper, paprika, and cumin, mixing thoroughly. Cook for an additional 5 minutes.
  6. Remove from heat, stir in the chopped parsley, and let it cool slightly before serving.
