Ingredients

  • Green bell peppers - 2 large
  • Ground lamb or beef - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the ground meat to the skillet, breaking it apart with a spatula, and cook until browned.
  5. Stir in the tomato paste, cumin, paprika, salt, and black pepper, cooking for an additional 2 minutes.
  6. Remove the skillet from heat and mix in the chopped parsley and crumbled feta cheese, if using.
  7. Stuff the bell peppers with the meat mixture, packing it tightly.
  8. Place the stuffed peppers in a baking dish and add water to the bottom of the dish to help steam the peppers.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred.
