Ingredients
- Green bell peppers - 2 medium
- Long-grain rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Dried mint - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent, about 5 minutes.
- Add the minced garlic and diced tomato to the pan. Cook for another 3 minutes until the tomatoes soften.
- Stir in the rice, dried mint, paprika, salt, and black pepper. Sauté for 2-3 minutes, allowing the rice to absorb the flavors.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
- Once the rice mixture is ready, stir in the chopped parsley. Stuff each bell pepper with the rice filling, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If there is any leftover rice, you can spread it around the peppers in the dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil in the last 5 minutes for a slight browning.
