Ingredients

  • Green bell peppers - 2 medium
  • Long-grain rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Dried mint - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  3. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent, about 5 minutes.
  4. Add the minced garlic and diced tomato to the pan. Cook for another 3 minutes until the tomatoes soften.
  5. Stir in the rice, dried mint, paprika, salt, and black pepper. Sauté for 2-3 minutes, allowing the rice to absorb the flavors.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
  7. While the rice is cooking, prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
  8. Once the rice mixture is ready, stir in the chopped parsley. Stuff each bell pepper with the rice filling, pressing down gently to pack it in.
  9. Place the stuffed peppers upright in a baking dish. If there is any leftover rice, you can spread it around the peppers in the dish.
  10. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil in the last 5 minutes for a slight browning.
