- green bell peppers - 2 medium

- rice - 50 grams (1/4 cup)
- ground meat (beef or lamb) - 100 grams
- tomato paste - 1 tablespoon
- vegetable broth - 500 milliliters
- paprika - 1 teaspoon
- black pepper - 1/2 teaspoon
- salt - to taste
- fresh parsley - for garnish
Steps
- Cut the tops off the green bell peppers and remove the seeds. Set aside.
- In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- Incorporate the ground meat into the pot and cook until browned, stirring occasionally.
- Stir in rice, tomato paste, paprika, black pepper, and salt. Mix well and cook for 2-3 minutes.
- Fill the hollowed-out bell peppers with the meat and rice mixture until packed tightly.
- Place the stuffed peppers upright in the pot, then pour vegetable broth over the peppers until they are covered, leaving some space at the top.
- Bring the broth to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the peppers are tender and the rice is cooked through.
- Once cooked, carefully remove the peppers and place them in bowls. Ladle the broth over the stuffed peppers and garnish with fresh parsley before serving.
