Ingredients

  • green bell peppers - 2 medium
  • olive oil - 2 tablespoons
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • rice - 50 grams (1/4 cup)
  • ground meat (beef or lamb) - 100 grams
  • tomato paste - 1 tablespoon
  • vegetable broth - 500 milliliters
  • paprika - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • salt - to taste
  • fresh parsley - for garnish

Steps

  1. Cut the tops off the green bell peppers and remove the seeds. Set aside.
  2. In a pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Incorporate the ground meat into the pot and cook until browned, stirring occasionally.
  5. Stir in rice, tomato paste, paprika, black pepper, and salt. Mix well and cook for 2-3 minutes.
  6. Fill the hollowed-out bell peppers with the meat and rice mixture until packed tightly.
  7. Place the stuffed peppers upright in the pot, then pour vegetable broth over the peppers until they are covered, leaving some space at the top.
  8. Bring the broth to a boil, then reduce the heat and let it simmer for 25-30 minutes, or until the peppers are tender and the rice is cooked through.
  9. Once cooked, carefully remove the peppers and place them in bowls. Ladle the broth over the stuffed peppers and garnish with fresh parsley before serving.
