Biber Dolması Burger

Ingredients
- 2 large bell peppers (red or green)
- 150g quinoa, rinsed
- 300ml vegetable broth
- 50g feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 50g breadcrumbs
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- 2 whole grain burger buns
- Lettuce leaves (for serving)
- Tomato slices (for serving)
Steps
- Preheat your oven to 180°C (350°F).
- In a saucepan, bring the vegetable broth to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa is cooking, prepare the bell peppers. Cut the tops off the peppers and remove the seeds. Brush the outside of the peppers with 1 tablespoon of olive oil and place them upright in a baking dish.
- In a skillet, heat the remaining olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 5 minutes.
- In a large bowl, combine the cooked quinoa, sautéed onion and garlic, crumbled feta cheese, breadcrumbs, cumin, paprika, salt, and pepper. Mix well until all ingredients are combined.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in. Place the stuffed peppers in the oven and bake for 25 minutes, or until the peppers are tender.
- While the peppers are baking, toast the burger buns lightly.
- Once the peppers are done, remove them from the oven and let them cool slightly. Place each stuffed pepper on a burger bun, add lettuce and tomato slices, and garnish with fresh parsley.
