Ingredients

  • Bell peppers - 2 large (red or green)
  • Long-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Parsley - 2 tablespoons, chopped
  • Mint - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash the bell peppers and cut off the tops, removing the seeds and membranes inside.
  3. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Stir in the diced tomato and cook for an additional 3-4 minutes until softened.
  5. Add the rice, paprika, salt, and black pepper to the pot, mixing well to combine.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low and cover. Let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  7. Once the rice is ready, remove the pot from heat and mix in the chopped parsley, mint, and lemon juice.
  8. Stuff the prepared bell peppers with the rice mixture, packing it gently but firmly.
  9. Place the stuffed peppers upright in a baking dish. Drizzle the remaining olive oil over the top.
  10. Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  11. Remove the foil for the last 5 minutes of baking to allow the tops to brown slightly.
  12. Serve warm, garnished with additional herbs if desired.
