Ingredients
- Bell peppers - 2 large (red or green)
- Long-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Parsley - 2 tablespoons, chopped
- Mint - 1 tablespoon, chopped
- Olive oil - 2 tablespoons
- Vegetable broth - 250 milliliters
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Wash the bell peppers and cut off the tops, removing the seeds and membranes inside.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Stir in the diced tomato and cook for an additional 3-4 minutes until softened.
- Add the rice, paprika, salt, and black pepper to the pot, mixing well to combine.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low and cover. Let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Once the rice is ready, remove the pot from heat and mix in the chopped parsley, mint, and lemon juice.
- Stuff the prepared bell peppers with the rice mixture, packing it gently but firmly.
- Place the stuffed peppers upright in a baking dish. Drizzle the remaining olive oil over the top.
- Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove the foil for the last 5 minutes of baking to allow the tops to brown slightly.
- Serve warm, garnished with additional herbs if desired.
