- Ground lamb - 250 grams
- Onion - 1 medium, finely chopped

- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato paste - 2 tablespoons
- Water - 100 ml
- Lavash bread - 2 pieces
- Yogurt - 100 grams, for serving
- Sumac - 1 teaspoon, for garnish
Steps
- In a mixing bowl, combine the ground lamb, chopped onion, minced garlic, parsley, paprika, cumin, salt, and black pepper. Mix thoroughly until well combined.
- Form the mixture into long, cylindrical kebabs, about 10 cm in length.
- Heat 1 tablespoon of olive oil in a grill pan over medium heat. Grill the kebabs for about 8-10 minutes, turning occasionally until they are browned and cooked through.
- In a separate saucepan, heat the remaining olive oil and add the tomato paste. Stir for a minute, then add water and mix to create a smooth sauce. Cook for 5 minutes on low heat, allowing the sauce to thicken slightly.
- Warm the lavash bread in another pan or microwave for a few seconds until pliable.
- Place the grilled kebabs on the lavash, drizzle with the tomato sauce, and roll the lavash tightly around the kebabs.
- Serve the Beyti Kebabı topped with a dollop of yogurt and a sprinkle of sumac.
