Ingredients

  • Ground lamb - 250 grams
  • Onion - 1 medium, finely chopped

  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Water - 100 ml
  • Lavash bread - 2 pieces
  • Yogurt - 100 grams, for serving
  • Sumac - 1 teaspoon, for garnish

Steps

  1. In a mixing bowl, combine the ground lamb, chopped onion, minced garlic, parsley, paprika, cumin, salt, and black pepper. Mix thoroughly until well combined.
  2. Form the mixture into long, cylindrical kebabs, about 10 cm in length.
  3. Heat 1 tablespoon of olive oil in a grill pan over medium heat. Grill the kebabs for about 8-10 minutes, turning occasionally until they are browned and cooked through.
  4. In a separate saucepan, heat the remaining olive oil and add the tomato paste. Stir for a minute, then add water and mix to create a smooth sauce. Cook for 5 minutes on low heat, allowing the sauce to thicken slightly.
  5. Warm the lavash bread in another pan or microwave for a few seconds until pliable.
  6. Place the grilled kebabs on the lavash, drizzle with the tomato sauce, and roll the lavash tightly around the kebabs.
  7. Serve the Beyti Kebabı topped with a dollop of yogurt and a sprinkle of sumac.
