Ingredients

  • Ground lamb - 250 grams
  • Ground beef - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lavash bread - 2 sheets
  • Tomato - 1 large, diced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Yogurt - 200 grams
  • Lemon - 1, for juice

Steps

  1. In a large bowl, combine ground lamb, ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Shape the meat mixture into elongated kebabs, about 10 cm long and 3 cm wide.
  3. Preheat the grill or a grill pan over medium-high heat. Cook the kebabs for about 4-5 minutes on each side, or until cooked through and nicely charred.
  4. While the kebabs are cooking, heat olive oil in a saucepan over medium heat. Add diced tomato and cook until softened, about 5 minutes.
  5. Stir in tomato paste and cook for an additional 2-3 minutes. Season with salt and pepper to taste.
  6. Remove the kebabs from the grill and wrap each kebab in lavash bread. Place them on a serving plate.
  7. Pour the tomato sauce over the wrapped kebabs, and serve with a generous dollop of yogurt on the side. Squeeze fresh lemon juice over the dish before serving.
