Ingredients
- Ground lamb - 250 grams
- Ground beef - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lavash bread - 2 sheets
- Tomato - 1 large, diced
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Yogurt - 200 grams
- Lemon - 1, for juice
Steps
- In a large bowl, combine ground lamb, ground beef, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Shape the meat mixture into elongated kebabs, about 10 cm long and 3 cm wide.
- Preheat the grill or a grill pan over medium-high heat. Cook the kebabs for about 4-5 minutes on each side, or until cooked through and nicely charred.
- While the kebabs are cooking, heat olive oil in a saucepan over medium heat. Add diced tomato and cook until softened, about 5 minutes.
- Stir in tomato paste and cook for an additional 2-3 minutes. Season with salt and pepper to taste.
- Remove the kebabs from the grill and wrap each kebab in lavash bread. Place them on a serving plate.
- Pour the tomato sauce over the wrapped kebabs, and serve with a generous dollop of yogurt on the side. Squeeze fresh lemon juice over the dish before serving.
