Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • White cheese (Beyaz Peynir) - 150 grams, crumbled
  • Fresh parsley - 10 grams, chopped
  • Black pepper - 2 grams
  • Egg - 1, for egg wash

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. Preheat the oven to 220°C (428°F).
  5. Once the dough has risen, punch it down and divide it into two equal pieces.
  6. Roll each piece into an oval shape about 1 cm thick. Place on a baking sheet lined with parchment paper.
  7. Spread the crumbled white cheese evenly over each dough oval, leaving a small border around the edges.
  8. Sprinkle chopped parsley and black pepper on top of the cheese.
  9. Fold the edges of the dough slightly inward to create a raised border.
  10. Beat the egg and brush it over the edges of the dough for a golden finish.
  11. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the cheese is melted.
  12. Remove from the oven, let it cool slightly, then slice and serve warm.
