Ingredients
- Cauliflower - 300 grams, chopped into florets
- Almond milk - 500 ml, unsweetened
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon, or to taste
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the chopped cauliflower to the pot and stir for another 2 minutes, allowing it to absorb the flavors.
- Pour in the almond milk and bring the mixture to a gentle simmer. Season with salt, black pepper, and cumin.
- Cover the pot and let it cook for 15-20 minutes, or until the cauliflower is tender.
- Once cooked, remove from heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh chopped parsley.
