Ingredients

  • Cauliflower - 300 grams, chopped into florets
  • Almond milk - 500 ml, unsweetened
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon, or to taste
  • Cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the chopped cauliflower to the pot and stir for another 2 minutes, allowing it to absorb the flavors.
  3. Pour in the almond milk and bring the mixture to a gentle simmer. Season with salt, black pepper, and cumin.
  4. Cover the pot and let it cook for 15-20 minutes, or until the cauliflower is tender.
  5. Once cooked, remove from heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
  6. Stir in the lemon juice and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh chopped parsley.
