Ingredients

  • Dried white beans - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stick, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Soak the dried white beans in water overnight to rehydrate them.
  2. Drain and rinse the beans, then set aside.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for 5-7 minutes until softened.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Add the soaked beans, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for about 40-45 minutes, or until the beans are tender. Stir occasionally and add more broth or water if necessary.
  7. Once the beans are cooked, remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky for more texture.
  8. Season with salt, black pepper, and lemon juice to taste.
  9. Serve hot, garnished with fresh parsley.
