- Dried white beans - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stick, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Soak the dried white beans in water overnight to rehydrate them.
- Drain and rinse the beans, then set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for 5-7 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the soaked beans, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 40-45 minutes, or until the beans are tender. Stir occasionally and add more broth or water if necessary.
- Once the beans are cooked, remove the bay leaf and use an immersion blender to puree the soup to your desired consistency, or leave it chunky for more texture.
- Season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with fresh parsley.
