Ingredients

  • Beetroot - 200 grams, cooked and mashed
  • Chickpeas - 100 grams, cooked and mashed
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Red chili flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 3 tablespoons
  • Olive oil - 2 tablespoons, for frying
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. In a mixing bowl, combine the cooked and mashed beetroot and chickpeas until well blended.
  2. Add the finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, red chili flakes, salt, and black pepper to the bowl.
  3. Mix all ingredients thoroughly. Gradually add the all-purpose flour until the mixture holds together but is not too dry.
  4. Divide the mixture into two equal portions and shape each portion into a patty.
  5. Heat the olive oil in a non-stick frying pan over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until they are golden brown and crisp.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a lettuce leaf on each bun, followed by a beetroot patty, slices of tomato, and cucumber.
  8. Cover with the top half of the bun, serve immediately, and enjoy your delicious Beetroot Kebab!
