Ingredients
- Beetroot - 200 grams, cooked and mashed
- Chickpeas - 100 grams, cooked and mashed
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Red chili flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 3 tablespoons
- Olive oil - 2 tablespoons, for frying
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
Steps
- In a mixing bowl, combine the cooked and mashed beetroot and chickpeas until well blended.
- Add the finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, red chili flakes, salt, and black pepper to the bowl.
- Mix all ingredients thoroughly. Gradually add the all-purpose flour until the mixture holds together but is not too dry.
- Divide the mixture into two equal portions and shape each portion into a patty.
- Heat the olive oil in a non-stick frying pan over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until they are golden brown and crisp.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by a beetroot patty, slices of tomato, and cucumber.
