Ingredients

  • Canned white beans - 200 grams, rinsed and drained
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, thinly sliced
  • Parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Season the fish with salt and pepper, and grill for about 5-7 minutes on each side until cooked through and flaky.
  3. While the fish is grilling, prepare the salad by combining the rinsed white beans, cherry tomatoes, red onion, and parsley in a mixing bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create a dressing.
  5. Pour the dressing over the bean salad and toss gently to combine.
  6. Once the fish is cooked, remove it from the grill and let it rest for a couple of minutes.
