Ingredients

  • White fish fillets (such as cod or haddock) - 200 grams
  • Canned white beans (drained and rinsed) - 200 grams
  • Red onion - 1 small, thinly sliced
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 small, diced
  • Parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat a grill or a non-stick pan over medium-high heat.
  2. Season the fish fillets with salt, black pepper, and paprika on both sides.
  3. Grill the fish for about 4-5 minutes per side, or until cooked through and flaky.
  4. While the fish is cooking, in a large bowl, combine the white beans, red onion, cherry tomatoes, cucumber, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the bean salad and toss gently to combine.
  7. Once the fish is done, remove it from the grill and let it rest for a couple of minutes.
  8. Serve the grilled fish on a plate alongside the bean salad.
