- Canned white beans (drained and rinsed) - 200 grams
- Red onion - 1 small, thinly sliced
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 small, diced
- Parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat a grill or a non-stick pan over medium-high heat.
- Season the fish fillets with salt, black pepper, and paprika on both sides.
- Grill the fish for about 4-5 minutes per side, or until cooked through and flaky.
- While the fish is cooking, in a large bowl, combine the white beans, red onion, cherry tomatoes, cucumber, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the bean salad and toss gently to combine.
- Once the fish is done, remove it from the grill and let it rest for a couple of minutes.
- Serve the grilled fish on a plate alongside the bean salad.
