- White fish fillet (e.g., cod or haddock) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, diced
- Tomato - 1 medium, diced
- Fish stock - 500 ml
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the diced carrot, celery, and potato, cooking for about 5 minutes until slightly softened.
- Add the diced tomato to the pot and cook for another 3 minutes.
- Pour in the fish stock and bring the mixture to a boil.
- Reduce heat to a simmer and add the fish fillet, cooking for 10-12 minutes until the fish is cooked through.
- Stir in the lemon juice, chopped dill, salt, and black pepper to taste.
- Remove from heat and let it rest for a few minutes before serving.
