Ingredients

  • White fish fillet (e.g., cod or haddock) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, diced
  • Tomato - 1 medium, diced
  • Fish stock - 500 ml
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced carrot, celery, and potato, cooking for about 5 minutes until slightly softened.
  4. Add the diced tomato to the pot and cook for another 3 minutes.
  5. Pour in the fish stock and bring the mixture to a boil.
  6. Reduce heat to a simmer and add the fish fillet, cooking for 10-12 minutes until the fish is cooked through.
  7. Stir in the lemon juice, chopped dill, salt, and black pepper to taste.
  8. Remove from heat and let it rest for a few minutes before serving.
