- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Optional: pickled peppers - 2 pieces
Steps
- Preheat a grill or grill pan over medium heat.
- In a bowl, mix the olive oil, lemon juice, salt, and black pepper to create a marinade.
- Place the mackerel fillets in the marinade and let them sit for 5 minutes.
- Once the grill is ready, place the marinated mackerel fillets skin-side down on the grill.
- Grill the fish for about 5-7 minutes on each side until cooked through and flaky.
- While the fish is grilling, prepare the bread rolls by slicing them in half and toasting lightly on the grill for 1-2 minutes.
- Assemble the sandwich by placing lettuce, grilled mackerel, tomato slices, red onion, and chopped parsley inside the toasted rolls.
- Add pickled peppers if desired, then close the sandwich and serve immediately.
