Ingredients

  • Fresh mackerel fillets - 250 grams
  • Whole grain bread rolls - 2 pieces
  • Lettuce leaves - 4 leaves
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Lemon - 1, juiced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Optional: pickled peppers - 2 pieces

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, mix the olive oil, lemon juice, salt, and black pepper to create a marinade.
  3. Place the mackerel fillets in the marinade and let them sit for 5 minutes.
  4. Once the grill is ready, place the marinated mackerel fillets skin-side down on the grill.
  5. Grill the fish for about 5-7 minutes on each side until cooked through and flaky.
  6. While the fish is grilling, prepare the bread rolls by slicing them in half and toasting lightly on the grill for 1-2 minutes.
  7. Assemble the sandwich by placing lettuce, grilled mackerel, tomato slices, red onion, and chopped parsley inside the toasted rolls.
  8. Add pickled peppers if desired, then close the sandwich and serve immediately.
