Ingredients

  • Cauliflower - 300 grams, riced
  • Ground almonds - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
  3. Once cooked, allow the cauliflower to cool slightly and then rice it using a food processor or grater.
  4. In a large mixing bowl, combine the riced cauliflower, ground almonds, grated Parmesan cheese, egg, minced garlic, chopped parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  5. Shape the mixture into small oval kofta shapes, about the size of a golf ball.
  6. Place the kofta on a baking tray lined with parchment paper, ensuring they are spaced apart.
