Ingredients

  • semolina - 100 grams
  • almonds (finely chopped) - 30 grams
  • unsalted butter - 40 grams
  • water - 250 ml
  • sugar - 50 grams
  • vanilla extract - 1 teaspoon
  • cinnamon - 1/2 teaspoon

Steps

  1. In a saucepan, melt the butter over medium heat.
  2. Once melted, add the finely chopped almonds and sauté until lightly golden, about 3-4 minutes.
  3. Stir in the semolina and continue to cook, stirring constantly, until it turns a golden brown color, approximately 8-10 minutes.
  4. In another pot, combine water, sugar, vanilla extract, and cinnamon. Bring to a boil, stirring until the sugar dissolves.
  5. Gradually pour the boiling water mixture into the semolina while stirring continuously to prevent lumps.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 10-15 minutes, stirring occasionally until the semolina absorbs the liquid and thickens.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes.
  8. Fluff the helva with a fork and serve warm or at room temperature.
