Ingredients

  • Semolina - 100g
  • Sugar - 100g
  • Plain yogurt - 100g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Almond extract - 1 tsp
  • Ground almonds - 50g
  • Unsalted butter - 50g, melted
  • Water - 150ml
  • Sugar (for syrup) - 100g
  • Lemon juice - 1 tbsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the egg and sugar until the mixture is pale and fluffy.
  3. Add the yogurt, melted butter, almond extract, and ground almonds to the egg mixture, and mix well.
  4. In a separate bowl, combine the semolina and baking powder, then gradually fold this dry mixture into the wet ingredients until just combined.
  5. Grease a small baking dish (approximately 20cm x 20cm) with butter and pour the batter into it, spreading it evenly.
  6. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the syrup by boiling water, sugar, and lemon juice together in a saucepan for 10 minutes until slightly thickened.
  8. Once the cake is baked, remove it from the oven and immediately pour the hot syrup evenly over the cake.
  9. Allow the cake to soak for at least 15 minutes before slicing it into squares and serving.
