Ingredients
- Semolina - 100g
- Sugar - 100g
- Plain yogurt - 100g
- Egg - 1 large
- Baking powder - 1 tsp
- Almond extract - 1 tsp
- Ground almonds - 50g
- Unsalted butter - 50g, melted
- Water - 150ml
- Sugar (for syrup) - 100g
- Lemon juice - 1 tbsp
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the egg and sugar until the mixture is pale and fluffy.
- Add the yogurt, melted butter, almond extract, and ground almonds to the egg mixture, and mix well.
- In a separate bowl, combine the semolina and baking powder, then gradually fold this dry mixture into the wet ingredients until just combined.
- Grease a small baking dish (approximately 20cm x 20cm) with butter and pour the batter into it, spreading it evenly.
- Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the syrup by boiling water, sugar, and lemon juice together in a saucepan for 10 minutes until slightly thickened.
- Once the cake is baked, remove it from the oven and immediately pour the hot syrup evenly over the cake.
- Allow the cake to soak for at least 15 minutes before slicing it into squares and serving.
