Ingredients

  • Almond flour - 150 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. In a mixing bowl, combine almond flour and eggs, mixing until a dough forms. If the dough is too sticky, add a bit more almond flour.
  2. Knead the dough for a few minutes, then roll it out between two sheets of parchment paper until it's about 2-3 mm thick.
  3. Cut the rolled dough into thin strips to resemble pasta and set aside.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the sliced zucchini and diced bell pepper to the skillet, cooking for about 5-7 minutes until they are tender.
  6. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  7. In a separate pot, bring water to a boil and gently add the almond flour noodles. Cook for 2-3 minutes until they float to the surface.
  8. Drain the noodles and add them to the skillet with the sautéed vegetables. Toss everything together to combine.
  9. Season with salt and black pepper, and sprinkle grated Parmesan cheese on top before serving.
