- Almond flour - 150 grams
- Eggs - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Spinach - 100 grams, fresh
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
Steps
- In a mixing bowl, combine almond flour and eggs, mixing until a dough forms. If the dough is too sticky, add a bit more almond flour.
- Knead the dough for a few minutes, then roll it out between two sheets of parchment paper until it's about 2-3 mm thick.
- Cut the rolled dough into thin strips to resemble pasta and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the sliced zucchini and diced bell pepper to the skillet, cooking for about 5-7 minutes until they are tender.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- In a separate pot, bring water to a boil and gently add the almond flour noodles. Cook for 2-3 minutes until they float to the surface.
- Drain the noodles and add them to the skillet with the sautéed vegetables. Toss everything together to combine.
- Season with salt and black pepper, and sprinkle grated Parmesan cheese on top before serving.
