Baba Ghanoush
Baba Ghanoush is a smoky, creamy Turkish appetizer made from roasted eggplants blended with tahini, garlic, and lemon juice. It is perfect for dipping with pita bread or fresh vegetables.

Ingredients
- Eggplant - 1 medium (approximately 250g)
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons (30ml)
- Olive oil - 2 tablespoons (30ml), plus extra for drizzling
- Salt - 1/2 teaspoon (2g)
- Cumin - 1/4 teaspoon (1g)
- Fresh parsley - 1 tablespoon, chopped (optional, for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Prick the eggplant several times with a fork to prevent it from bursting while roasting.
- Place the eggplant on a baking sheet and roast in the oven for about 25-30 minutes, or until the skin is charred and the inside is soft.
- Remove the eggplant from the oven and let it cool for about 10 minutes.
- Once cooled, slice the eggplant in half and scoop out the flesh into a mixing bowl, discarding the skin.
- Add tahini, minced garlic, lemon juice, olive oil, salt, and cumin to the eggplant flesh.
- Use a fork or a food processor to blend the mixture until smooth and creamy.
- Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
- Transfer the Baba Ghanoush to a serving bowl, drizzle with olive oil, and garnish with chopped parsley if desired.
- Serve with warm pita bread or fresh vegetable sticks.
