Ingredients

  • Erişte (Turkish pasta) - 200 grams
  • Phyllo pastry - 4 sheets
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, grated
  • Spinach - 100 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Dill - 1 tablespoon, chopped
  • Water - 1 liter for boiling pasta

Steps

  1. Bring 1 liter of water to a boil in a large pot. Add the erişte and cook according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the diced bell pepper and grated zucchini to the skillet. Sauté for another 5 minutes until the vegetables are tender.
  4. Stir in the chopped spinach, and cook until wilted. Remove from heat and mix in the crumbled feta, salt, black pepper, paprika, and dill. Set the filling aside.
  5. Preheat the oven to 180°C (350°F).
  6. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
  7. Spread half of the cooked erişte evenly on the phyllo pastry. Top with the vegetable and feta mixture. Add the remaining erişte on top of the filling.
  8. Cover with the last sheet of phyllo pastry, brushing the top with olive oil. Fold in the edges to seal the filling.
  9. Transfer the börek to a baking dish and bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  10. Remove from the oven, let cool for a few minutes, slice, and serve warm.
