Ingredients
- Erişte (Turkish pasta) - 200 grams
- Phyllo pastry - 4 sheets
- Olive oil - 4 tablespoons
- Onion - 1 medium, finely chopped
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, grated
- Spinach - 100 grams, chopped
- Feta cheese - 100 grams, crumbled
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Dill - 1 tablespoon, chopped
- Water - 1 liter for boiling pasta
Steps
- Bring 1 liter of water to a boil in a large pot. Add the erişte and cook according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the diced bell pepper and grated zucchini to the skillet. Sauté for another 5 minutes until the vegetables are tender.
- Stir in the chopped spinach, and cook until wilted. Remove from heat and mix in the crumbled feta, salt, black pepper, paprika, and dill. Set the filling aside.
- Preheat the oven to 180°C (350°F).
- Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a third sheet.
- Spread half of the cooked erişte evenly on the phyllo pastry. Top with the vegetable and feta mixture. Add the remaining erişte on top of the filling.
- Cover with the last sheet of phyllo pastry, brushing the top with olive oil. Fold in the edges to seal the filling.
- Transfer the börek to a baking dish and bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
