- Feta cheese - 100 grams, crumbled
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Yufka pastry (or phyllo dough) - 4 sheets
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated zucchini to the skillet, cooking until the zucchini is softened and any excess moisture has evaporated, about 5-7 minutes. Season with salt and black pepper.
- Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in the crumbled feta cheese, chopped dill, and parsley.
- Lay one sheet of yufka pastry on a clean surface and brush it lightly with the beaten egg. Place another sheet on top and brush it again with egg.
- Spoon a portion of the zucchini filling along one edge of the pastry, then roll it up tightly, forming a cylinder. Place the rolled börek on a baking sheet lined with parchment paper.
- Repeat the process with the remaining sheets of pastry and filling, arranging the börek on the baking sheet.
- Brush the tops of the börek with the remaining beaten egg.
- Bake in the preheated oven for about 25-30 minutes, or until the pastries are golden brown and crisp.
- Remove from the oven and let cool slightly before serving. Enjoy warm!
