Ingredients

  • Zucchini - 200 grams, grated
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Feta cheese - 100 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Yufka pastry (or phyllo dough) - 4 sheets
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated zucchini to the skillet, cooking until the zucchini is softened and any excess moisture has evaporated, about 5-7 minutes. Season with salt and black pepper.
  4. Remove the skillet from heat and let the mixture cool slightly. Once cooled, stir in the crumbled feta cheese, chopped dill, and parsley.
  5. Lay one sheet of yufka pastry on a clean surface and brush it lightly with the beaten egg. Place another sheet on top and brush it again with egg.
  6. Spoon a portion of the zucchini filling along one edge of the pastry, then roll it up tightly, forming a cylinder. Place the rolled börek on a baking sheet lined with parchment paper.
  7. Repeat the process with the remaining sheets of pastry and filling, arranging the börek on the baking sheet.
  8. Brush the tops of the börek with the remaining beaten egg.
  9. Bake in the preheated oven for about 25-30 minutes, or until the pastries are golden brown and crisp.
  10. Remove from the oven and let cool slightly before serving. Enjoy warm!
