Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Egg - 1 large, beaten
  • Olive oil - 30 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the chopped spinach, crumbled feta, ricotta cheese, beaten egg, salt, and black pepper until well combined.
  3. Lay a sheet of phyllo dough on a clean surface and brush with olive oil. Place another sheet on top and brush with more olive oil.
  4. Spoon a portion of the spinach and cheese mixture along one edge of the phyllo, then roll it up tightly to form a log. Repeat with the remaining phyllo and filling.
  5. Place the rolled böreks on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds if using.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes before slicing and serving.
