Ingredients

  • Gluten-free phyllo dough - 200 grams
  • Pumpkin puree - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. In a mixing bowl, combine the pumpkin puree, crumbled feta cheese, sautéed onion and garlic, ground cinnamon, salt, and black pepper. Mix well until smooth.
  4. Lay out one sheet of gluten-free phyllo dough on a clean surface and brush lightly with olive oil. Layer another sheet on top and brush with oil again.
  5. Spoon a portion of the pumpkin filling along one edge of the phyllo dough, then roll it up tightly to form a log. Place the rolled börek on a baking sheet lined with parchment paper.
  6. Repeat this process with the remaining phyllo dough and filling until all are used.
  7. Brush the tops of the börek with the beaten egg and sprinkle with sesame seeds.
  8. Bake in the preheated oven for about 25-30 minutes, or until the tops are golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before slicing and serving.
