Ingredients
- Gluten-free phyllo dough - 200 grams
- Mushrooms (button or cremini) - 150 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms release their moisture and become tender, about 5-7 minutes.
- Stir in the chopped parsley, salt, and black pepper. If using, add the crumbled feta cheese and mix well. Remove from heat and let the filling cool slightly.
- Lay a sheet of gluten-free phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again.
- Spoon a portion of the mushroom filling along one edge of the phyllo, then fold the sides over and roll it up tightly to form a log. Place the rolled börek seam side down on a baking sheet.
- Repeat the process with the remaining phyllo and filling.
- Brush the tops of the böreks with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the böreks are golden and crispy.
- Remove from the oven and let cool slightly before serving.
