Ingredients

  • Gluten-free phyllo dough - 200 grams
  • Mushrooms (button or cremini) - 150 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
  3. Add the minced garlic and chopped mushrooms to the skillet. Cook until the mushrooms release their moisture and become tender, about 5-7 minutes.
  4. Stir in the chopped parsley, salt, and black pepper. If using, add the crumbled feta cheese and mix well. Remove from heat and let the filling cool slightly.
  5. Lay a sheet of gluten-free phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again.
  6. Spoon a portion of the mushroom filling along one edge of the phyllo, then fold the sides over and roll it up tightly to form a log. Place the rolled börek seam side down on a baking sheet.
  7. Repeat the process with the remaining phyllo and filling.
  8. Brush the tops of the böreks with the beaten egg for a golden finish.
  9. Bake in the preheated oven for 25-30 minutes, or until the böreks are golden and crispy.
  10. Remove from the oven and let cool slightly before serving.
