- Yufka pastry - 4 sheets
- Leeks - 200 grams, finely chopped
- Olive oil - 3 tablespoons
- Onion - 1 small, finely chopped
- Feta cheese - 100 grams, crumbled
- Egg - 1, beaten
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 1/4 cup
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the finely chopped leeks to the skillet and cook until they are soft, about 7-10 minutes. Season with salt and black pepper.
- Remove the skillet from heat and let the mixture cool slightly. Stir in the crumbled feta cheese and the beaten egg until well combined.
- Lay one sheet of yufka pastry on a clean surface and brush it lightly with olive oil. Place another sheet on top and repeat the process.
- Spoon half of the leek mixture along one edge of the layered pastry, then roll it tightly into a log shape.
- Place the rolled börek onto a baking tray lined with parchment paper. Repeat the process with the remaining yufka and filling.
- Brush the tops of the börek with a mixture of the remaining olive oil and water.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven, allow to cool slightly, and then slice into pieces to serve.
