Ingredients

  • Yufka pastry - 4 sheets
  • Leeks - 200 grams, finely chopped
  • Olive oil - 3 tablespoons
  • Onion - 1 small, finely chopped
  • Feta cheese - 100 grams, crumbled
  • Egg - 1, beaten
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1/4 cup

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the finely chopped leeks to the skillet and cook until they are soft, about 7-10 minutes. Season with salt and black pepper.
  4. Remove the skillet from heat and let the mixture cool slightly. Stir in the crumbled feta cheese and the beaten egg until well combined.
  5. Lay one sheet of yufka pastry on a clean surface and brush it lightly with olive oil. Place another sheet on top and repeat the process.
  6. Spoon half of the leek mixture along one edge of the layered pastry, then roll it tightly into a log shape.
  7. Place the rolled börek onto a baking tray lined with parchment paper. Repeat the process with the remaining yufka and filling.
  8. Brush the tops of the börek with a mixture of the remaining olive oil and water.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven, allow to cool slightly, and then slice into pieces to serve.
