Ingredients

  • Eggplant - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Phyllo dough - 6 sheets
  • Butter - 50 grams, melted

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Dice the eggplant into small cubes and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the diced eggplant, cumin, paprika, salt, and black pepper. Cook until the eggplant is softened, about 10 minutes. Remove from heat and stir in the chopped parsley. Allow the filling to cool.
  6. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and repeat the process with 2 more sheets, creating a stack of 4 sheets.
  7. Spoon half of the eggplant filling along one edge of the phyllo stack, then fold the sides in and roll it up tightly to form a log.
  8. Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with more melted butter.
  9. Repeat the process with the remaining phyllo sheets and eggplant filling to make a second börek.
  10. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  11. Remove from the oven and let cool slightly before slicing. Serve warm.
