- Yufka (or phyllo dough) - 4 sheets
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, grated
- Ricotta cheese - 50 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the crumbled feta, grated mozzarella, ricotta, chopped parsley, egg, black pepper, and salt. Mix until well blended.
- Lay one sheet of yufka (or phyllo dough) on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again with olive oil.
- Spoon a portion of the cheese mixture along one edge of the dough, creating a line, and leave some space at the ends.
- Fold the sides of the dough over the filling, then carefully roll it up into a tight cylinder.
- Place the rolled börek seam-side down on a baking sheet lined with parchment paper.
- Repeat the process with the remaining sheets of dough and filling.
- Brush the tops of the börek with a little more olive oil and sprinkle with sesame seeds if desired.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before slicing and serving.
