Börek (Vegan)
Vegan Börek is a delightful Turkish pastry filled with savory vegetables and herbs, wrapped in flaky layers of dough. Perfect as a snack or appetizer, this dish is both comforting and satisfying.

Ingredients
- Yufka (or phyllo dough) - 4 sheets
- Olive oil - 3 tablespoons
- Spinach - 150 grams, chopped
- Mushrooms - 100 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh dill - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the chopped mushrooms and spinach to the pan, cooking until the spinach wilts and the mushrooms release their moisture (about 5-7 minutes).
- Stir in the nutritional yeast, salt, black pepper, dill, and parsley. Cook for another 2 minutes, then remove from heat and let cool slightly.
- Lay one sheet of yufka (or phyllo dough) on a clean surface and brush lightly with olive oil. Place a second sheet on top and brush again.
- Spoon a portion of the filling along one edge of the dough, then fold in the sides and roll tightly to form a cylinder.
- Place the rolled börek on a baking sheet lined with parchment paper. Brush the top with olive oil.
- Repeat the process with the remaining sheets and filling.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before slicing and serving.
