Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Fresh spinach - 100 grams, chopped
  • Mushrooms - 100 grams, diced
  • Red bell pepper - 1 small, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan cheese (optional) - 50 grams

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.
  3. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  4. Add the diced mushrooms, red bell pepper, and chopped spinach to the skillet. Cook for about 5 minutes until the vegetables are softened.
  5. Stir in the tomato paste, paprika, cumin, black pepper, and fresh parsley. Cook for an additional 2-3 minutes, then remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Divide the rested dough into two equal parts. Roll each portion into an oval shape on a floured surface, about 1/2 cm thick.
  8. Place the vegetable filling along the center of each dough oval, leaving space on the edges. If using, sprinkle vegan cheese on top of the filling.
  9. Fold the edges of the dough over the filling and pinch to seal, creating a boat shape.
  10. Transfer the Börek Pide to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
  11. Once baked, remove from the oven and let cool for a few minutes before serving.
