- All-purpose flour - 200 grams
- Warm water - 100 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Fresh spinach - 100 grams, chopped
- Mushrooms - 100 grams, diced
- Red bell pepper - 1 small, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegan cheese (optional) - 50 grams
Steps
- In a mixing bowl, combine the flour and salt. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the diced mushrooms, red bell pepper, and chopped spinach to the skillet. Cook for about 5 minutes until the vegetables are softened.
- Stir in the tomato paste, paprika, cumin, black pepper, and fresh parsley. Cook for an additional 2-3 minutes, then remove from heat.
- Preheat the oven to 220°C (428°F).
- Divide the rested dough into two equal parts. Roll each portion into an oval shape on a floured surface, about 1/2 cm thick.
- Place the vegetable filling along the center of each dough oval, leaving space on the edges. If using, sprinkle vegan cheese on top of the filling.
- Fold the edges of the dough over the filling and pinch to seal, creating a boat shape.
- Transfer the Börek Pide to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
- Once baked, remove from the oven and let cool for a few minutes before serving.
