Ingredients

  • Almond flour - 200g
  • Coconut oil - 50g, melted
  • Eggs - 2 large
  • Spinach - 100g, chopped
  • Feta cheese - 100g, crumbled
  • Ground lamb - 150g
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Egg (for egg wash) - 1

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of melted coconut oil over medium heat, and sauté the chopped onion and minced garlic until softened.
  3. Add the ground lamb to the skillet, cooking until browned. Season with paprika, salt, and black pepper. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the almond flour, melted coconut oil, and eggs to form a dough. Mix until well combined.
  5. Divide the dough into two equal portions. Roll out each portion between two sheets of parchment paper into a thin rectangle.
  6. Place half of the lamb and spinach mixture onto one half of each rolled-out dough, then sprinkle crumbled feta cheese on top.
  7. Fold the dough over to cover the filling, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
  8. Beat the additional egg and brush it over the top of each börek to give it a golden color.
  9. Place the börek on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Remove from the oven, allow to cool slightly, then slice and serve warm.
